Cheesy Taco Bake

this is not as fast as other recipes I have posted. but you can have it all together in about 30 minutes.

this is something that is quick to throw together when you feel like mexican but don’t want plain old tacos again.

what you will need is:

1 lb velvtea cheese

1 small bag frozen corn

8 small flour tortillas

1 pkg taco seasioning

1 1/2 c instant rice

1 1/2 c water

1 lb groud beef or turkey

8 oz sour cream

brown your meat and add taco seasioning. then add water and rice. remove from heat and allow rice to absorb water. then return to heat and add corn and cheese.  stir until all cheese is melted, add sour cream and stir together. when everything is combined place 4 tortillas in the bottom of a baking dish place mixture on top and cover with second layer then top that layer with remainging mixture. place in a 350 degree oven to bake. when finished the top layer will be bubbly and brown. serve with Taco sauce, onions, more sour cream and guacamole.

this is fast and easy once you put it in the oven it only takes a few mintues to brown.

I hope you enjoy this differnt take on the traditional taco.

Mac N Cheese

my step daughter loves Mac N Cheese. most kids do, I grew up eating the old box stuff with the powder cheese. when I think about it now, seem so long ago. I have found over the years many recipes to combine the old box stuff with new ingredients. I will share those some other time. My husband on the other hand grew up eating the old box stuff and now in his 40’s hates it. after 12 years of marriage I have had to come up with new ways of making it. here is just one of the ways I have been able to get him to eat it.

This is a different type of mac n cheese. its a meal in itself, I hope when you make it you enjoy it as much as we do.

what you will need for this recipe:

1 lb of velveta

1 lb monteray jack

1 box of pasta, i like to use elbow or rotini. you can use any type you like

1 can rotel

1 package cubed ham or 1 lb cubed chicken

Pre heat oven to 325 degrees. cook pasta per directions. drain and set aside. in same pan melt cheese and rotel together. when cheese is melted add ham or chicken. then put pasta back in and stire to coat pasta. put in deep dish baking dish and top with bread crums or cracker crumbs. place in oven to bake until crumbs are golden brown.

serve.

this is can be made to be hotter by adding pepperjack cheese rather than the velveta…you can also season your chicken with Fajia seasioning.

this is someting different to have when you need a change. you can also use this as a side dishe to chicken by leaving the chicken out of it.

Apple & Walnut pancakes

My husband loves pancakes, so I try had to come up with different ways to make them. this is one of his favorite. this morning as he was eating them he suggested I post this one on my blog. so here I am blogging about this recipe my husband loves!

I make my home made pancakes but you could also use whatever pancake mix you like. My husband like Buttermilk pancakes so rather than using any oil in my batter I use buttermilk and eggs. I also like to add a little cinnamon to the batter.

the syrup is an apple & walnut syrup that my husband loves just as a desert some times.

I start with 2 apples sliced thin, I leave the sking on them. Put 1/2  a stick of whatever butter you like to use in the pan ( I use real butter) place apples on top of butter and allow butter to melt over Medium heat the apples will start to cook. when the butter has melted add about 1/2 a cup of Brown sugar and allow to desolve in the butter. stir to coat all of the apples. then add 1 cup of walnuts if you perfer less you can add less. if you would rather have a different type of nut you can add whatever you prefer. I have made this with Pecans but my husband prefers walnuts. stir in nuts and then add a dash of all spice, 1/4 tsp of Cinnamon and a spash of Vanilla. continue to cook over medium until apples are tender but not mush. i like for them to hold there shape. allow to cool a little so the brown sugar mixture thickens and coats everything even more. place a pancaked on the plate and top with the apple walnut mixture. you can serve with a spoon on cool whip or even redi whip. this is a great breakfast and I promise it will be a big hit in your house like it is in mine.

this topping is great on ice cream as well…my husband hate pie crust so i serve this over ice cream rather than making apple pie.

Popcorn candy

this is a fast and fun thing to make with kids. its ooie gooie and so good!

what you will need is:

6 cups or more of your favorite butter popcorn ( i use microwave)

1 cup sugar

3 tbsp butter

1/4 cup water

a splash vanilla extract (or whatever extract you would like to use)

you can also add your favorite nuts

pop corn and set aside…remove all seeds

in a sauce pan combine all ingredients other than nuts and extract.

bring to a boil and then boil for about 3 minutes. remove from heat add extract and combine.

place popcorn in a metal bowl or on a deep baking sheet.

pour over popcorn make sure you cover all popcorn. if you are going to eat right away…this is best done in a bowl where it can be stired to cool. once all popcorn is covered add nuts and mix together. this is something that kids love and its a sweet and salty snack when you need something. most of us have the ingredients on hand at all times so …next time your craving something sweet and salty give this a try, I promise you will not be disapointed!

so grab a move and grab the popcorn it’s family time once again!

Easy Fruit Cake cookies

I have always loved Fruit cake cookies at Christmas. I never liked making them because they take so long. this year I decided to creat my own recipe.

this is something that is fast and easy…and they taste like they took much longer to make.

you will need the following:

1 package of Sugar cookie mix (for the butter go by the cut out cookie recipe on back)

add 1 egg

1 tsp All spice

1 tsp Cinnamon

1/2 tsp nutmeg

1/4 cup chopped candied pineapple

1/4 cup chopped candied cherries

1/2 cup to 1 cup chopped walnuts

1/4 cup chopped raisins

you can also add rum or rum extract

preheat oven to 375 degrees. Combine all ingredients until well incorporated. place in fridge for 30 minutes to 1 hour to rest and to chill. then drop cookies onto cookie sheet. I alwasy use the baking mats for the cookie sheets. they are great and your cookies will be perfect every time. bake cookies for 10 minutes or until lightly brown. take from oven and remove from cookie sheet. place on cooling rack and allow to cool completely. if you feel like the need more spice you can add more. they are great if you lightly brush with a spiced rum as soon as they come out of the oven. but if you do this, Please do not allow kids to eat them. they are great served with Egnog.

Easy Dumplings

here are the easiest dumplings you could ever make. I make this recipe to add to Chicken stock for chickena nd dumplings. I have also made the dumplings smaller and added meat and pasta sauce. if you make them small enough, you can referigerate them and as breakfast you can saute them with butter, onion and eggs.

this is something we use to eat as kids. this was a cheap recipe for my mother to make.

What you will need is:

1 cup flour (you can use all purpose or Wheat)

1/2 cup water

1 egg

bring water to a boil and drop dough one spoon full at a time in boiling water. they will float to the top when done. allow to cook a minute more then remove from water.

by adding chicken broth, 2 cups of chicken meat and enough chicken gravy to thicken the broth. this will give you fast and easy chicken and dumplings.

you can make a fast dinner by browing 1 lbs of ground beef. drain and add to sauce pan. add 1 jar of chunckey garden vegetable pasta sauce, 1 can rotel season with salt and pepper to taste. add the pasta and top with your favorite cheese. place in a 300 degree oven to melt cheese. I always serve this with Garlic Cheese Bread.

as a breakfast dish you can saute onion in butter, add pasta and eggs..cook until eggs are done. you can also add Ham to this to add something different. it is a great meal and the pasta makes it very filling.

we all love maccroni and cheese..this is a great adult mac and cheese. add 1 jar of Ragu 3 cheese sauce, 1 can rotel, and Ham cut into cubes. heat through and serve. my husband and I love to eat this by its self as a meal.

Oven fried potatoes

My husband loves fried potatoes. In the past I was not someone who cared about the health factor of what I cooked.

Now, I do and I have found that Olive oil is a great way to make fried potatoes a little healtier. this is something that is so simple. I make this on Sunday Mornings as a special treat for my husband.

for this recipe you will need a good non stick baking sheet. I love the Cahaphalon baking sheets. drizzle the sheet with Extra Virgin Olive Oil. Preheat Oven to 425 Degrees. peel about 5 medium size potatoes. I slice them into slices that are about medium in thickness. if they are to thick they will not cook as fast. I place them on the olive oil covered baking sheet. toss them with you fingers to coat them. I only use enough olive oil to coat them lightly. the point of using the olive oil is to cut back on the vegetble oil fats. and by using the non stick baking sheet you will not need oil to keep them from sticking. then I sprinkle with our favorite seasioning. my husband loves Cajun seasoning. the warmth of the speices on his crispy potatoes. place them in the oven and let bake until golden brown. My husband likes them very dark..not burnt but dark and crispy.

onces ready plate and enjoy!

I enjoy eating them with nothing on them, My husband has to have his ketchup and my step daughter has to have mustard. however you like to eat them, make these potatoes a part of your Sunday monring tradition.

Vegetable Fettuccine

My Dr Recently told me I could no longer eat Tomatoes. I thought I would die, I love tomatoes!

I was in search of good Italian food that did not call for tomatoes.

In my quest to find great Italian food, I found the following recipe. this recipe is something that you can make in the winter and summer. all you need to do is simply adjust the vegetables you use. you can use any vegetables that you like.

what you will need is the following:

2lbs of assorted fresh vegetables

1 envelope Lipton Recipe Secrets savory herb with garlic soup mix

3 tbsp Bertolli extra virgin olive oil

1/2 cup light cream, whipping or heavy cream, you can even use half and half

1/4 cup grated parmesan cheese (I have used the Italian belnd shreaded cheese)

8 ounces fettuccine or linguine, cooked and drained

I have used the following vegies cut into 1 inch chunks; Zucchini, Yellow squash, red, green or yellow bell peppers, carrots, celery, onion and mushrooms. I have also used eggplant during the summer. this is so simple and any combination of vegies can be used. you can also use onion soup mix.

Preheat oven to 450 degrees. in a 13 X 9 inch baking or roasing dish, combine vegetables, soup mix an doil until evenly coated.

bake uncovered, stiring once, 20 minutes or until vegetables are tender. stir in light cream and cheese until evenly coated.

toss with hot fettuccine. serve, if desired, with additional cheese and fresh ground pepper.

this will feed 2 people as a meal or 4 as a side dish.

Easy Cheese and Rice

this is a great recipe to have on hand when you need a quick side item. it’s also great to make when you just want something warm and Cheesey!

all you need for this is the following.

2 cups instant rice

2 cups chicken broth

1 bag of Italian blend cheese

1 bag of frozen peas and carrots

bring broth to a boil, add rice, turn off heat cover and let cook. when all liquid is absorbed add the peas and turn on low to warm them through. trun off heat, add the Italian cheese stir together and serve.

Cowboy stew

this is a simple and easy recipe that kids love.

my mother use to make me this when I was a kid. I loved it, and all of the generations of children in our family love this as well. I hope you like it just as much as we do.

this is a recipe you can make while camping as well.

for this recipe you will need the following.

1 cast iron dutch oven

2 cans pork and beans or baked beans

1 cup BBQ sauce

1 can of big grands biscuts

1 lbs hamburger

brown hamburger in dutch oven, add beans and BBQ sauce. cover with biscuts and cover and cook until biscuts are cooked through.

like I said this is an easy and FAST recipe. so enjoy!
