Easy Apple Butter

Have you ever wanted to make your own jams or jellies? well if you like apple butter this is a quick and easy way to enjoy.

there are several different things you can add to your apple butter. if you like a cinnamon apple butter that is very sweet you can add red hots. if you like apple butter with a light cinnamon flavor but not too sweet you can just add the cinnamon.

1 jar no sugar added apple sauce

1 sauce pan

1 pkg red hots

pour apple sauce in sauce pan and cook on Medium - High heat until it gets thick. the apple sauce will reduce when the liquid starts to cook out of it. when it starts to thicken add the red hots one hand full at a time, tasting once they are melted. when you get to the flavor you like cook again until everything is combined and it has reduced more. the apple butter will get even thicker when it cools.

I love to make this to take to parties or even to have Christmas Morning when we have our traditional Christmas Morning breakfast.

Fast Easy Cookies

if you love Chocolate mint cookies you will love this recipe.

Chocolate Mint cookies 

1 pkg Ritz Crackers

4 squares melting chocolate

pepermint extract

in double boiler,  melt chocolate. add pepermint to taste. dip Ritz crackers in chocolate and place on wax paper to cool.

that is all there is to this recipe, enjoy!

Coconut cookies 

1 pkg Ritz Crackers

10 carmels unwrapped

3 squares melting chocolate

toasted coconut

place coconut on cookie sheet and place in the oven to lightly toast.

melt chocolate in double boiler…melt carmel in microwave safe bowl.

with a spreader, spread carmel on cracker, top with coconut. place on wax paper to cool. once you have done all of the crackers let them cool a few minutes to set the carmel up. once carmel is cool dip bottom of each cracker (side with nothing on it) in the chocolate. place on wax paper to cool once again.

when finished you have a great tasting cookie.

Peanut butter heaven

1 pkg Ritz crackers

peanut butter

4 squares melting chocolate

place a scoop of peanut butter on each cracker and place in the freezer to set up. when frozen dip cookies in melted chocolate and cover completely. place on wax paper to set up.

Christmas Time Candy

At Christmas we all like to give something special. This Christmas give some homemade candy. its simple and fast, not to meniton the tase is fabulious!

Coconut Chews

3C Brown Sugar

1 C milk

1 tsp butter

1C flaked coconut

Melt 1 cup brown sugar, add milk and remaining sugar and butter. Boil to a soft ball add coconut and beat drop by teaspoons onto wax paper and cool.

Bonbons

you can made many different types with this simple recipe

1 (3oz) cream cheese

2 1/2 C sifted confectioners sugar

1/4 tsp vanilla

1 (3 1/2 oz) can flaked coconut

Beat Cream cheese until light and fluffy. add sugar gradually and continue beating until well mixed. add vanilla and mix well. form into bite size balls. roll in coconut. Chill for several hour.

another option is to mix the coconut in with the cream cheese mixture, then add raisins and nuts. place in freezer for 1 hour.

Melt dipping chocolate in double boiler until smooth. remove bonbons from freezer and dip into the chocolate. place back on wax paper lined cookie sheet and place back in freezer.

they are both great candy that can be given as gifts or just shared with your family and friends. so enjoy once again and remember great food starts with love!

South of the Border

One night a week my husband loves to have Mexican food.
with times the way they are, we no longer go out to eat for our Mexican night. I have found low budget ways to make a great Mexican dinner at home!

Sangria cocktails

the bottle of sparkling wine is not cheap but can be used to make several different types of drinks for this one you will only use a small portion of the bottle.

to make the sangria cocktails you will need the following.
1 bottle of Sangria drink (you can find this in your Mexican food isle at your local grocery store. it comes in a green glass bottle.)
1 bottle of your favorite sparkling wine.
( I recommend the Sparkling GOLDEN SPUMANTE from the stone hill winery in Branson Missouri.)
in a chilled Champaign flute pour half a glass of sangria and half a glass of the Golden Spumante. to keep chilled drop in a couple frozen grapes ( i like the small purple)
appetizer

Spicy Spinach dip

1 can Rotel Tomatoes ( I use the HOT, you can use whatever you like.)
1 Cup frozen spinach thawed and drained
1/2 lb velveeta cheese

with this recipe you can throw everything together in a small crock pot and let it work together while you work on dinner.
Main Entree

Chicken Chalupas

I like to use the can chicken mean…or you can use one of the pre-cooked chickens you can pick up at your local deli.

Preheat over to 350degrees
you will need about 2 cups of chicken meat
1 cup sour cream
1/2 lb velveeta cheese  crumbled (keep some of the cheese to top the dish)
1 can rotel ( I use hot)
1 package of flour

heat chicken in a non stick skillet, add the rotel, cheese and sour cream heat through.
spray a 2 qt baking dish with cooking spray. fill shells with chicken mixture and roll like a burrito. place the burritos into the pan, you should have a little of the chicken mixture left over. once you have the burritos in the pan spoon the mixture down the center then sprinkle with cheese. place in the oven and bake until cheese is golden brown.

server with sliced tomatoes, Lettuce, Avocado, and corn salsa. you can also serve with extra sour cream.

Desert
cinnamon crisps & ice cream

Preheat oven to 425 degrees
4 flour tortilla shells
Butter
Cinnamon 2 teaspoons
sugar 1/4 Cup
Apple pie filling
Your favorite Vanilla ice cream
Redi whip

spread  butter on the flour shells. Mix together sugar and cinnamon together in a bowl. sprinkle the shells with the sugar mixture. bake in the oven until crispy.
remove from the oven and let cool.  Heat in a microwave safe bole the apple mixture until warm but not hot.
place a shell on plate and add a scoop of apple pie filling. top with ice cream and redi whip.
my husband also likes to add a little Carmel ice cream topping.

Enjoy your Mexican dinner…with this dinner, the velveeta is in the appetizer and the main meal. you also use the flour shells in the main meal and the desert.
you can buy a big package of the shells and even use them toasted in the oven or fried to eat with your spinach dip.

if you are on a tight budget you can make only the main meal and desert and the dinner will still be great! for a family, this is also a great dinner you can chose to use just diced tomatoes rather than the rotel. you may need to add seasonings to the chicken mixture so its not bland. Children love the desert, this could be one where you allow the kids to make their own.

With your spouse or with your family, enjoy one another and enjoy the food!

Cake for two in just 5 minutes

This is an easy recipe that would be great for kids to help with.

You will need the following:

4tablespoons flour

4tablespoons sugar

2tablespoons cocoa

1egg

3tablespoons milk

3tablespoons oil

3tablespoons chocolate chips

1/4 teaspoon vanilla

1large coffee mug

add dry ingredients to mug, mix well.

add egg and mix well. pour in the milk and oil and mix. add chocolate chips and vanilla extract, mix again. put your mug in the microwave and cook for 3 minutes at 1000 watts. the cake will rise over the top of the mug, don’t be alarmed. allow to cool a little and tip out onto a place if desired or eat out of the mug.

some variations of this recipe would be to use Vanilla powder rather than cocoa powder. and use white chocolate chips rather than chocolate chips.

you can also add different extracts rather than vanilla. this would be good with a peppermint extract. or if using the vanilla you could add and amaretto extract.

experiment with this go crazy, let your kids go crazy…but most of all enjoy!!

Love to cook but never have the time?

I call myself a food addict. I love everything, even things you wouldn’t think you should eat. I have to say I have tried a lot of them. I was raised with the belief, you have to at least try it before you can say you dont like it. For generations my family has passed down recipes that take so long to make. Why is it that we think in order for it to taste good, it has to take a long time to make. I want to share my recipes with everyone. things that you might think would take hours to make, I find ways to make them fast and simple. this is what my blog will consist of. Recipes that I have tried and think other will like. With my recipes you can make a 3 course meal in an hour or less. So if you think you don’t have the time. Try one of my recipes and see for yourself. Great food is just minutes away.
